Smoked salmon blintzes

- 70 g flour
- 40 g buckwheat flour
- 1 teaspoon sugar
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2 eggs, divide yolks from whites
- 125 ml milk
- 50 g butter, melted
- 125 ml sour cream
- a pinch of salt
- fresh ground pepper
- brace of fresh chives or dill, chopped
- 220 g smoked salmon
Serve as a coctail snack, brunch or next to refreshing salad on a lunch – in any case these filled salmon delights will not leave anyone cold.
Mix the flour, salt, baking powder, and sugar in a bowl. In another bowl beat the egg yolks, add the milk and stir in the flour. Beat the egg whites in a mixer and stir into the mixture. Add butter and stir until the mixture is homogeneous.
Brush a Ceramica Prima Fry Pan with melted butter and heat it over a stove, but a field-size gas burner would do as well. Put 1 1/2 tablespoons of the blintzes mixture onto the pan, with intervals of a few cm. Cook until the bubbles appear on the surface, for about 1-2 minutes, turn and cook for another minute. Brush the pan with butter before adding batter each time.
For filling, combine the cream, salt, pepper and chives. Put a teaspoon of the filling on each blintz and finish with a thin slice of salmon.
